Salad is the prompt for today. Tacos are our theme of the week. So, it would be logical for us to make a taco salad, right? Nah. We’d rather make salad tacos! Lucky for us, our friends over at The Taco Cleanse have us covered. After all, what would taco week be without at least one recipe from The Taco Cleanse. We became friends with the brilliant minds behind The Taco Cleanse a few years ago on one of our trips to Austin, and they’re just as nice as they are good with a taco!
When we first started talking about this prompt, there was a fair bit of “…” and “???” and *shrug*. Mike joked that we should just focus on b12 by making all the noochiest things we could imagine. Gosh, we love the nutritional yeast around here. It’s hard to believe there was a time in our lives when we didn’t even know it existed.
I started flipping through Jae Steele’s Get It Ripe for ideas, noticing all the foods that contain various B vitamins: black beans, Romaine lettuce, spinach, tomatoes (thiamine); legumes, spinach (riboflavin); avocado (niacin); cauliflower (B5); avocado, cauliflower, walnuts, cabbage (B6); and of course B12 in nutritional yeast. Inspiration struck.
Barbecue. Chicken. Pizza. With two kinds of garlic, two cheeses, bacon, and jalapeno. Heck yeah!
I’m going to start with a disclaimer – the way I did this, it wasn’t quick. It was easy and it was really delicious, but I definitely took the long way around. However, it’s incredibly easy to make quickly, if you want or need. Pizza time!
