When we first started talking about this prompt, there was a fair bit of “…” and “???” and *shrug*. Mike joked that we should just focus on b12 by making all the noochiest things we could imagine. Gosh, we love the nutritional yeast around here. It’s hard to believe there was a time in our lives when we didn’t even know it existed.
I started flipping through Jae Steele’s Get It Ripe for ideas, noticing all the foods that contain various B vitamins: black beans, Romaine lettuce, spinach, tomatoes (thiamine); legumes, spinach (riboflavin); avocado (niacin); cauliflower (B5); avocado, cauliflower, walnuts, cabbage (B6); and of course B12 in nutritional yeast. Inspiration struck.
I have seen so many creative blog posts today! I am loving the countless ways people chose to interpret this prompt! Mike and I talked about “thinking outside of the box” for this prompt – or, rather, outside of the blueberry. But last year, at the height of berry season (and after I had made our fill of jams), I canned a quart and a pint of blueberry pie filling. And while I knew I didn’t want to make a pie, I was eager to crack open one of those jars for this prompt. I also challenged myself to make something I’d never made before.
Hi, there. Mike here with my first Vegan Mofo post. The lovely and talented Sarra has been keeping us on the level for the last three days, but here is my first offering. Today’s prompt is weird food combinations, which is admittedly a challenging topic. The rise of fusion cuisine has rendered the notion of weird food combinations nearly obsolete. If you can imagine a combination, some trendy chef somewhere has already put them together, and her peers are rapidly following suit.
Barbecue. Chicken. Pizza. With two kinds of garlic, two cheeses, bacon, and jalapeno. Heck yeah!
I’m going to start with a disclaimer – the way I did this, it wasn’t quick. It was easy and it was really delicious, but I definitely took the long way around. However, it’s incredibly easy to make quickly, if you want or need. Pizza time!
Y’all, I had this whole thing figured out – I was going to make a dinner we ate a lot as a kid. But when Mike went to get eggless ribbon noodles from the one store we know for sure carries them, they… don’t anymore. Well, damn. So I thought about what I could do instead – pizza? No, I’m doing that tomorrow (spoiler!). Maybe breakfast for dinner? That was SO exciting to me and my siblings when we were kids, so maybe. And then, at like 4 in the afternoon, when my sockless feet were cold and I needed to grab a cardigan to chase away a chill, I got it – I remembered one of my all-time favorite childhood dinners: tomato soup and grilled cheese. Good morning! Okay, it’s not morning. But it was when I made this breakfast! I thought about doing a fancy breakfast, or an involved breakfast, or a showy breakfast, or even a vegan take on a traditional Americana breakfast (my favorite!), but I ultimately decided to make and photograph (and eat) a usual weekday breakfast. Indeed, if you already follow my Instagram, you’ve seen variations of this breakfast before. Neither one of us has a big morning appetite, and Mike is a big bread-lover, so weekday breakfasts are usually something starchy and an excellent cup of coffee – well, an excellent cup of coffee if you’re me; Mike waits until he gets to work to have coffee, so it’s 1) not good because it’s 2) Starbucks.
