Another make-up post, squeaking in just under the wire (1 more hour until the end of MoFo on the west coast!). This was supposed to be from last week, but life and party prep got all lifey and stressful and we just didn’t get it done. I thought it’d make a nice Halloween dessert, so I made it today!

Vegan MoFo, Day 24: Party!
We’ve got a lot going on lately! In fact, this week we happen to be preparing for a party we’re throwing this coming Friday night. Due to busy-ness, I decided to approach this prompt differently than I might otherwise have during a less busy week. Instead of making party food, I thought I’d showcase foods we’ve made for parties in the past.

When I first read this prompt, I knew exactly what I was going to talk about: canned goods. Mike and I started canning farmer’s market produce a few years ago, and I’ve spent most of the past few summers preserving foods (this summer has been the exception). It’s Sunday evening, and I’m trying to catch up on the last few days of MoFo. We had it all planned out, but life has been hectic!
It’s time to talk about Thursday nights! For the last few months, we’ve been having Thursday night date night. Date night is the best! Here in Seattle, we have tons and tons of wonderful vegan options, but we definitely have our favorites, and we love our traditions, so we follow the same pattern every Thursday.
Vegan MoFo, Day 10 – Something Blue
I have seen so many creative blog posts today! I am loving the countless ways people chose to interpret this prompt! Mike and I talked about “thinking outside of the box” for this prompt – or, rather, outside of the blueberry. But last year, at the height of berry season (and after I had made our fill of jams), I canned a quart and a pint of blueberry pie filling. And while I knew I didn’t want to make a pie, I was eager to crack open one of those jars for this prompt. I also challenged myself to make something I’d never made before.
Vegan MoFo, Day 8 – Make a New Vegan Friend
Before anything else, I’m going to tell you that I didn’t do this prompt. Between recovering from the surgery I had two and a half weeks ago and planning for the wedding, I’m both busy and low-stamina, and I’m home a lot.
Instead, I decided to make something that I would serve to a new friend who came to visit… or to an acquaintance I wanted to turn into a friend!
Vegan MoFo, Day 5 – Best Sandwich Ever!
Mike and I thought – both apart and together – about this prompt a lot. We discussed many options, and we each pondered many more. It seemed an impossible choice – sandwiches are pretty much Mike’s favorite food, and we’ve both eaten so many amazing sandwiches that we had no idea how we’d decide which one was the best ever. Breakfast sandwiches, with eggy tofu and bacon and melty cheese and runny Vegg yolk? Grilled macaroni and cheese (this was a contender)? The bacon cheeseburger from Arlo’s in Austin? Buffalo chicken hoagies? Chicken parmesan on grilled sourdough? A vegan Cuban sandwich? Homemade seitan pastrami with mustard and spicy garlic dills? We went on and on, around and around.
And then Mike hit on it.
Vegan Mofo, Day 2 – Recreate a Childhood Favorite
Y’all, I had this whole thing figured out – I was going to make a dinner we ate a lot as a kid. But when Mike went to get eggless ribbon noodles from the one store we know for sure carries them, they… don’t anymore. Well, damn. So I thought about what I could do instead – pizza? No, I’m doing that tomorrow (spoiler!). Maybe breakfast for dinner? That was SO exciting to me and my siblings when we were kids, so maybe. And then, at like 4 in the afternoon, when my sockless feet were cold and I needed to grab a cardigan to chase away a chill, I got it – I remembered one of my all-time favorite childhood dinners: tomato soup and grilled cheese.
