Vegan MoFo Day 14 – Repurposing Food

Since last week was taco week, we have no shortage of leftover tortillas in the house. When you’ve got leftover tortillas and it’s soup week, you make tortilla soup!

Sarra’s go to recipe for tortilla soup comes from Yellow Rose Recipes by Joanna Vaught. She’s made it enough times that she adds and subtracts from it based on years of trial and error, but I was making it for the first time, so I stuck to the recipe pretty closely.

It’s a great book.

As usual for this time of year, we got a ton of fresh ingredients at the Farmer’s Market to go into this soup. We even bought a ghost pepper at last weekend’s market, so it had to go in this soup! Around Fake Meat and True Love HQ, spicy food is always good, and this soup is no exception. The heat of the ghost pepper resulted in a slow burn that really popped, but never outshone the other flavors of the soup. Other fresh ingredients included corn, celery, bell pepper, garlic, tomato, and cilantro. We love our Farmer’s Markets, and we love this soup!
