Junk food! In the Fake Meat and True Love household, it’s like a religion. We have a Friday night tradition – we eat a bunch of junk food and watch movies that are so bad they’re good. It’s a fantastic way to spend a night! Well, tonight is Monday, but there’s still room for junk food.
One of our favorite junk food meals is the fish and chips taco. The beauty of junk food is that it’s often prepared from prepackaged food, which makes preparation a snap. In this case, the tacos were filled with Gardein fishless filets, a bag of fries, Leahey’s cheese sauce, and some malt vinegar. It’s uncharacteristic for us to use so much prepared food, but we tend to make an exception for junk food night.
Another junk food staple is the jalapeno popper. For tonight’s dinner, we got all fancy business and deconstructed them a bit. We took some fresh jalapenos from the Farmer’s Market, cut them in half, and filled them with a mixture of Kite Hill cream cheese, Wayfare bacon bits, and garlic. We topped them with a little bit of panko, and got them into the oven at 425 degrees for about 35 minutes.
Last but not least, we had a little bit of street corn. We’re a bit past grilling season here the Pacific Northwest, so we gave the corn a quick boil before topping it with some Just Mayo and a bit of chili powder. What a treat!
