Vegan MoFo, Day 5 – Late Night Snack

Late nights are for easy, satisfying snacks. When we’re out of steam after a long day and we’re relaxing at home in front of the television, we crave the comforting, carbohydrate and fat laden treats of our childhoods, but lack the energy to spend a whole lot of time in the kitchen. What’s a vegan to do?


Oh, of course!

That’s right! We’re picking our pizza theme back up here at Fake Meat True Love HQ with English muffin pizzas. So simple – you toast an English muffin halfway, brush on a tiny bit of olive oil, smear on your favorite pizza sauce (full disclosure – I made a sauce instead of using jarred sauce), shred a little cheese over the top (these have Follow Your Heart’s Garden Herb variety), sprinkle with the dried herbs and spices of your choice (these have oregano and basil), and pop them into a 350 degree oven for 10 – 15 minutes until the cheese is good and melty. Late night snack crisis averted!

  1. I used to make little English muffin pizzas with my students when I was doing cooking lessons with kids – it was always so much fun! I’d still be tempted to make some kind of smiley/monster face on my mini pizzas now, in honour of those days.
